Chicken Basil Chili

Ingredients

  • 1/2 Lb. Assorted Dry Beans- Soaked Overnight
  • 1 Large Spanish Onion- medium dice
  • Green Peppers- medium dice
  • 1 Tablespoon Vegetable Oil
  • 2 Cloves Garlic- chopped
  • 2 Tablespoons Basil
  • 2 Tomatoes- diced
  • 2 Cooked Chicken Breasts- 1/4" cubes
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Cumin- ground
  • One 8 oz can Tomato Paste
  • Salt and Pepper to taste

Directions

  1. Combine the onions, peppers and oil in a large pot. Cook until almost translucent. Add garlic, basil and sweat for 2 minutes.
  2. Pour in the soaked beans into the pot, then add diced tomatoes, add water to cover, cubed chicken, chili powder and cumin.
  3. Bring to a boil then simmer until beans are soft, add tomato paste and salt/pepper to taste.
