Chocolate Mocha Pound Cake With Strawberries

Ingredients

  • Nonstick baking spray with flour (such as Baker’s Joy)
  • 1/4 cup trans fat free margarine
  • 2 ounces reduced fat cream cheese
  • 1 cup sugar
  • 1 egg
  • 2 egg whites
  • 1 tablespoon vanilla extract
  • 1 1/2 teaspoons butter extract, divided
  • 1 1/4 cups cake flour
  • 1/2 cup dark cocoa powder (such as Hershey’s Special Dark Cocoa)
  • 2 tablespoons instant espresso coffee powder or instant coffee powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 6 ounces low fat coffee flavored yogurt

Glaze:

  • 1/2 cup powdered sugar
  • 3 tablespoons water
  • 12 strawberries sliced

Instructions

Preheat oven to 350°F. Spray a 9 x 5-inch loaf pan with baking spray and set aside. In a large bowl using an electric mixer, cream together the margarine and cream cheese. Add the sugar and beat well. Add the egg, egg whites, vanilla extract and 1 teaspoon butter extract and beat until well blended. In a separate bowl, combine the flour, cocoa powder, instant espresso powder, baking powder, baking soda and salt. Add dry ingredients to creamed mixture alternately with the yogurt. Pour the batter into the prepared pan and bake for 50 to 55 minutes or until a wooden pick comes out clean. To prepare glaze, in a small bowl or measuring cup, combine the powdered sugar, water and 1/2 teaspoon butter extract. While bread is still warm, pour the glaze over the top of the loaf. Cool in pan on a wire rack for 20 minutes. Remove bread from pan and cool completely on wire rack. Serve each slice garnished with a sliced strawberry.
