Creamy Vegetable Soup

Ingredients

  • 1 Tablespoon canola oil
  • 1 onion, diced
  • 2 Tablespoons flour
  • 1 can (15oz) evaporated non-fat milk
  • 1 quart chicken or vegetable stock

Suggested vegetables

  • 1 bunch chopped broccoli
  • 1 cup sliced mushrooms
  • ½ head chopped cauliflower
  • 5 ribs sliced celery
  • 2 large diced potatoes
  • Corn from 3-4 ears
  • 1 bunch chopped asparagus

Directions

  1. Sauté onion in oil until softened, add flour and stir to coat.
  2. Slowly pour in evaporated non-fat milk, stirring constantly to avoid lumps.
  3. Pour in stock, stir in vegetables and simmer until desired consistency.
  4. Season with salt and pepper.
  5. The soup can also be pureed in a blender or food processor.
