Cucumber Tomato and Chick Peas

Ingredients

  • 2 tomatoes, cored and chopped
  • 1 English cucumber, chopped
  • 1 (15.5 ounce) can chick peas, drained and rinsed
  • 2 tablespoons red-wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon fresh basil, chopped

Instructions

Combine tomatoes, cucumber and chick peas in a large bowl. In a small bowl, or measuring cup combine red wine vinegar, olive oil, mustard, salt, black pepper and basil; stir with a whisk; drizzle over tomato mixture, tossing gently to coat. Chill and serve using a slotted spoon.
