Double Chocolate Pancakes

Ingredients

  • 1/2 cup white whole-wheat flour
  • 6 tablespoons sugar
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup skim mil
  •  1 cup low-fat Greek-style vanilla yogurt, divided
  • 2 tablespoons trans fat-free margarine, melted
  • 1 tablespoon vanilla extract
  • 1/4 cup miniature chocolate chips
  • 6 fresh strawberries, sliced
  • Additional cocoa powder (optional garnish

Instructions

In a bowl, whisk together the all-purpose flour, whole-wheat flour, sugar, cocoa powder, baking powder, baking soda and salt; set aside. In a separate bowl, beat the egg, milk, 1/4 cup yogurt, margarine and vanilla. Stir in the flour mixture until just moistened and fold in chocolate chips. Lightly spray a nonstick griddle or skillet with cooking spray. Heat over medium-high heat. Drop batter onto skillet using an 1/8 cup measure and cook until bubbles form and the edges are dry. Flip and cook until browned on the other side. To serve, top 3 pancakes with 2 tablespoons yogurt and one sliced strawberry. Dust with cocoa powder if desired.
