Garlic Potato Salad

Ingredients

  • 1/3 cup light salad dressing (such as Miracle Whip Light)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, finely minced
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 3 pounds Yukon Gold potatoes, cooked, cooled and cut into 1-inch pieces
  • 1/3 cup celery, diced
  • 1/4 cup red onion, diced

Instructions

Mix salad dressing, mustard, vinegar, garlic, black pepper and salt in a large bowl. Stir in potatoes, celery and onion. Mix lightly. Refrigerate at least 1 hour before serving.


Yield: 8 servings (about 3/4 cup per serving)
