Ingredients

  • Parchment paper or nonstick cooking spray
  • 1/3 cup trans fat free margarine
  • 3 ounces reduced fat cream cheese
  • 1/8 cup packed brown sugar
  • 1 cup plus 3 tablespoons granulated sugar, divided
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 teaspoon orange zest
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

Preheat oven to 350°. Line a cookie sheet with parchment paper or coat with cooking spray; set aside. In a large bowl, cream together the margarine, cream cheese, brown sugar and 1 cup granulated sugar. Beat in the egg, vanilla and orange zest. In a separate sift together the flour, baking soda, ginger, cinnamon, cloves and salt. Gradually stir the dry ingredients into the sugar mixture. Drop dough by rounded tablespoons and roll them in the remaining 3 tablespoons of sugar. Place the cookies 2 inches apart onto prepared baking sheet and bake 8 to 10 minutes, or until edges begin to brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack. Makes 24 large cookies.
