Ingredients

  • 1/4 cup white wine
  • 2 tablespoons Dijon-style mustard
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons peeled, grated fresh ginger
  • 2 tablespoons sliced green onion
  • 1 tablespoon brown sugar
  • 1 pound salmon steaks (about 4 ounces each), rinsed, patted dry
  • Vegetable oil cooking spray
  • 1/4 cup orange marmalade, melted

Instructions

In a heavy-duty plastic sealable bag, combine wine, mustard, soy sauce, vinegar, ginger, green onion and brown sugar. Add the salmon; seal and marinate in the refrigerator for 30 minutes. Remove the salmon and discard the marinade. Preheat the grill or broiler. Spray a grill rack or broiler pan with cooking spray. Place the salmon on the grill rack or broiler pan. Cook about 3 minutes, and then brush each steak with marmalade. Cook an additional 3 minutes. Turn steaks over and baste with marmalade; cook about 6 minutes or until the fish flakes easily when tested with a fork.
