Grilled Summer Bounty Vegetable Medley

Cooking Time: 15 minutes (Total time will vary with appliance and setting.)

Level of Difficulty: Easy


  • 1 Large Eggplant
  • 1 Yellow Squash
  • 1 Green Zucchini Squash
  • 1 Bell Pepper
  • 2 cups Chopped Tomato (fresh or canned)
  • Balsamic Vinegar
  • Black Pepper
  • Fresh Basil


  1. Slice the egg plant, yellow squash, zucchini and bell pepper. Leave the skin on all vegetables
  2. Either in a grill basket or by putting them directly on the grill, cook the vegetables until the browned and softened
  3. When cool enough to handle chop the vegetables into large pieces and toss with 2 cups chopped tomato
  4. Season to takes with black pepper, balsamic vinegar and fresh basil

This dish can be eaten as is or you can add pasta or chicken
