Harvest Kale Salad

Salad Ingredients:

  • 1 1/2 cup Fresh Kale
  • 1/3 cup Quinoa, Cooked
  • 3 Tbsp. Candied Pecans
  • 2 tbsp. Goat Cheese, Crumbled
  • ¼ cup Red Onion, Sliced
  • ¼ cup Dried Cranberries

Dressing Ingredients:

  • 3 Tbsp. Olive Oil
  • 2 tbsp. Lemon Juice
  • 1 tsp. Dijon Mustard
  • 1 tsp. Maple Syrup
  • 1 tsp. Assorted Fresh Herbs

Directions:

Salad:

  1. Massage kale and rip into bite size pieces.
  2. Place everything in a bowl and toss together.
  3. For best taste, let salad sit for at least 30 minutes to help the kale soften.

Dressing:

  1. Place juice, Dijon Mustard, maple syrup, and herbs in a bowl and mix together.
  2. Slowly drizzle in the olive oil and stir until dressing is emulsified
