Lentil Pilaf

DK recipes lentil pilaf


  • 1/4 cup Diced carrot
  • 1/4 cup Diced celery
  • 1/2 cup Diced onion
  • 1/4 cup Diced parsnip
  • 1 Tbsp. Extra virgin olive oil
  • 1/4 tsp. Ground black pepper
  • 1 tsp. Kosher salt
  • 2 cups Lentils
  • 5 cups Vegetable stock or water
  • 4 Baby bok choy, cut in half lengthwise
  • Roasted red pepper coulis or hot sauce (optional)


  1. Saute diced vegetables in olive oil 5 min. Add lentils and stock, simmer 15-20 min until lentils are tender.
    (You may need to add more stock.) If lentils are done and there is still liquid, allow to stand a few minutes to absorb.
  2. Steam bok choy for 12 min until tender. Serve with roasted red pepper coulis or your favorite hot sauce.
