Multigrain Salad with Dried Cranberries

Dressing

  • 1/4 cup Extra virgin olive oil
  • 1 tsp. Dijon mustard
  • 2 Tbsp. Lemon juice
  • 1 tsp. Red wine vinegar
  • 1 Tbsp. Chopped parsley
  • 1 Tbsp. Basil
  • Pinch Salt
  • Pinch Black pepper

Whisk olive oil with other ingredients, set aside.

Salad:

  • 1/4; cup Dried cranberries
  • 1/4 cup Diced cucumber
  • 1/4 cup Red, yellow or orange pepper
  • 2 Tbsp. Diced red onion
  • 1/2; cup Barley, cooked  
  • 1/2 cup Farro, cooked
  • 1/2 cup Brown rice, cooked

Combine all ingredients, coat with dressing. Season with salt and pepper to taste. May need to add dressing after it sets.
