Sauteed Apples in Phyllo Crust

Ingredients

  • Vegetable oil cooking spray
  • 4 sheets (9-x 14-inch) phyllo (fillo) dough, thawed
  • 1 tablespoon cinnamon sugar mixture
  • 2 1/2 tablespoons trans fat-free margarine
  • 4 cups peeled, sliced apples (Granny Smith work well)
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract

Instructions

Preheat oven to 350 degrees. Spray a 6-count muffin pan with cooking spray. Layer 4 phyllo sheets, spraying each sheet with cooking spray and sprinkling each sheet with cinnamon sugar mixture. Cut the stacked sheets into 6 equal squares. Place each stacked phyllo square into the muffin cup pan. Carefully push the phyllo stack into each muffin cup, leaving the points sticking up. Bake for 4 to 8 minutes, or until golden brown. Remove from oven and set aside. Melt the margarine in a large nonstick skillet over medium heat. Add the apples and sauté, stirring constantly, about 6 to 8 minutes or until apples are almost tender. Stir in the brown sugar, cinnamon and vanilla and cook one additional minute or until sugar melts. Fill each phyllo crust with sautéed apples and serve.
