Spicy Chicken over Rice

Ingredients
- 2/3 cup barbeque sauce
- 1/2 cup applesauce
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/3 cup raisins
- 3 cups snow peas
- 1 medium red bell pepper, cut into thin strips
- 1 medium onion, cut into wedges
- 2 tablespoons canola oil, divided
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts cut into 1/2 – inch strips
- 1/4 cup peanuts
- 2-2/3 cups cooked brown rice
Instructions
Combine barbeque sauce, applesauce, curry powder, salt, black pepper, thyme and raisins in a bowl and set aside. In a large non stick skillet, sauté snow peas, red pepper, onion and garlic in 1 tablespoon oil. Remove vegetables from skillet and set aside. Sauté chicken in remaining tablespoon of oil until just cooked (about 2 to 3 minutes per side). Stir barbeque sauce mixture in with cooked chicken and heat until bubbly. Add sautéed vegetables and stir until they are coated with sauce. Garnish with peanuts.
Yield: 6 servings (1 cup chicken over 2/3 cup brown rice)
