Strawberry Cake

Ingredients

  • 1 (18.25-ounce) trans fat free white cake mix (such as Betty Crocker Super Moist White cake mix)
  • 3 1/4 cups water, divided
  • 1/2 cup unsweetened strawberry applesauce (such as Mott’s Healthy Harvest Summer Strawberry)
  • 3 egg whites
  • 2 tablespoons canola oil
  • Nonstick baking spray with flour (such as Baker’s Joy)
  • 1 (0.30 ounce) package sugar free strawberry gelatin, divided
  • 1 (8 ounce) container fat free whipped topping (such as Cool Whip Fat Free)
  • 2 cups diced strawberries

Instructions

Preheat oven to 350°F. In a large bowl, combine the cake mix, 1 1/4 cups water, applesauce, egg whites and oil and beat according to package directions. Pour batter into a 13 x 9-inch baking pan coated with nonstick baking spray and bake for 27 to 30 minutes. Let cake stand 20 minutes and using a fork or wooden pick, poke holes over the entire cake. In a small bowl, prepare the strawberry gelatin with remaining water according to package directions. Pour only 1 cup of gelatin over the cake, cover and refrigerate for 2 hours. Frost cake with the whipped topping and top with diced strawberries.
