Zesty Cucumber Salad

Ingredients

  • 5 cups English cucumber, sliced (about 2 small cucumbers)
  • 1 cup reduced fat sour cream
  • 1/2 cup lemon juice, fresh squeezed
  • 2 tablespoons sugar
  • 1 teaspoon dried dill weed
  • 1/4 teaspoon salt

Instructions

In a small bowl, combine sour cream, lemon juice, sugar, dill weed and salt. Place sliced cucumbers in a large bowl and pour sour cream dressing on top and gently stir to coat cucumbers. Serve immediately or chill.


Yield: 8 servings (about 2/3 cup per serving)
